Homemade Rhubarb Lemonade

There’s not much better than a cold glass of lemonade on a hot day, right? Especially homemade, fresh-squeezed lemonade, there simply isn’t anything better.

But you can step it up a notch by adding rhubarb to it.

Rhubarb takes it up to a whole new level. I am trying to figure out how to describe it. I wouldn’t say it makes it sweeter like adding strawberries, but it does seem sweeter and it makes the tartness just a little different. I don’t know, but it’s really yummy.

And it is just perfection on a hot summer afternoon.

Serves: makes about ½ gallon
Ingredients
  • 2 cups water
  • 2 cups sugar
  • 2 cups chopped rhubarb
  • 2 cups fresh squeezed lemon juice
  • 3-4 cups water
Preparation Instructions
  1. To make the simple syrup, place the 2 cups water, sugar and rhubarb in a large saucepan and bring to a boil. Stir to dissolve sugar. Once dissolved, remove from heat and allow to cool to room temperature. If you want it to chill a little quicker, you can stick it in the fridge.
  2. Once the simple syrup is cool or at least room temperature, place it in a large pitcher, add the lemon juice and water.
  3. Pour over ice and serve.
