Fish 'n' Chips SandwichWho likes fish sandwiches?!

If you answered that you do, then you should make these.

They are SO good and SO easy to make.

The kids love them, the husband loves them, I love them. Every time I make these everyone jumps for joy, and since it’s so simple to make, they have become a regular on our dinner menu.

I always make the tarter sauce from scratch.

Homemade tarter sauce is necessary at all times. Click here for the recipe 🙂 it only takes a couple extra minutes and it’s totally worth it. 

OR you can make it with a homemade mayonnaise, which is also super easy to make. The version you see in the photo was actually a sorrel mayonnaise, which is why it is green. Sorrel, if you’ve never had it, has a bright citrus flavor to it. So when you add it to the mayonnaise it gives it a fun lemony flavor. Just throw some dill pickles on there and call it good! 

Mmmmm, so yummy!

Ingredients
  • 6 small cod filets
  • 1 bag salt and vinegar chips (the Kettle Chips brand works wonderfully)
  • salt and pepper
  • 2 egg whites
Preparation Instructions
  1. Preheat the oven to 425˚.
  2. Place a wire rack in a rimmed baking sheet and coat the rack with baking spray.
  3. Place the chips in a large ziptop bag and crush them into bits.
  4. Sprinkle a little salt (just a little salt - the chips are salty so you don't need much) and pepper on each filet and then dredge each fish filet in the egg white and then in the chips, press the chips on to make them stick.
  5. Place on the wire rack and bake until cooked through and golden brown, about 15-18 minutes.
  6. Serve with fresh tarter sauce and a juicy tomato slice.
