I found myself at Costco the other day….by myself. Which meant I had the opportunity to browse a little more than normal. So I found myself in the cheese aisle buying an enormous wheel of brie. I had no idea what was going to happen with it, but I knew it would be good. First I made Brie and Strawberry Grilled Sandwiches for breakfast, and now this.
Which was absolutely delightful. If you love lots of smooth, melted cheese you will love this.
- ½ recipe Grandma’s Pie Crust
- 4 ounces, weight Brie Cheese (rind Removed If Preferred)
- 4 ounces, weight Swiss Cheese, Diced
- 10 slices Bacon, Cooked Crisp, Drained, Crumbled
- 6 whole Large Eggs
- ½ cups Whipping Cream
- ½ cups Sour Cream
- 1 teaspoon Worcestershire Sauce
- Dash of salt and pepper
- Preheat oven to 375º.
- Roll pie crust out to fit in a deep dish pie pan. Carefully place the crust in the pie pan and crimp the edges.
- Crumble both the cheeses in an even layer in the pie crust, then add the bacon.
- In a medium bowl, whisk together the eggs, cream, sour cream, worcestershire sauce and salt and pepper.
- Pour cream mixture into the pie shell.
- Bake until a toothpick inserted into the center comes out clean, about 45 minutes (1 hour at high altitude).
- Remove from oven and let sit 10 minutes before serving.
