Chinese Chicken Salad

I got this recipe quite a few years ago from a friend of my sister’s named Jessica.

Jessica kept having baby showers and bridal showers at her house for  various people from our church and I kept going because she always served this salad.

I would just sit there through the entire shower and eat and eat and eat loads of this salad.

It’s amazing.

So after going to a few showers for people who I barely knew so I could eat this salad eventually just asked for the recipe.

I am so glad I did, as Jessica and I have both since moved away from Washington and if I hand’t gotten the recipe when I did I would just be sitting here dreaming about it instead of actually eating it.

Now. In the picture, the wonton strips you see are ones I did actually buy from the store.

Yes. I cheated.

But my excuse is because I am pregnant and I wanted to eat this salad even though I am feeling lazy. You can certainly go the cheaters route if you want to as well, however, I will warn you that frying your own wonton strips tastes WAY better and it really is worth the extra effort. I would encourage you to make it twice if you are tempted to cheat on the wontons, first make the wontons yourself and then next time buy them and then you can decide if it’s worth the effort. I have to admit that I regret doing it the cheaters route even though it seemed like a good idea at the time.

Oh well. I still enjoyed my dining experience and there were no complaints from the peanut gallery.

This recipe makes a huge salad by the way. From these instructions I can feed my family of 2 adults and 3 young children as a main course and have some left over. If you were serving it as a side, you could certainly feed at least 10 probably more. I usually leave the dressing on the side so I can save the leftovers for lunch the next day but you do what you want 🙂

Jessica's Chinese Chicken Salad

Serves: 6-8
Ingredients
  • FOR THE SALAD
  • ½ package wontons, cut into strips
  • 2 cups peanut oil
  • 1 rotisserie chicken
  • 1 head torn red lettuce
  • 3 green onions chopped
  • 1 red onion, thinly sliced
  • 1 cup snow peas (frozen peas work great)
  • ½ head red cabbage, thinly sliced
  • 4 tablespoons sesame seeds
  • 4 tablespoons slivered almonds
    FOR THE DRESSING
  • 4 tablespoons granulated sugar
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • ½ cup olive oil
  • 6 tablespoons red wine vinegar
Preparation Instructions
  1. Heat the peanut oil in a frying pan over medium high heat.
  2. Once hot, fry the wonton strips in batches until half the package is cooked (you can save the remainder of the package in the freezer). Drain the fried wontons on a paper towel and set aside.
  3. Preheat oven to 350˚.
  4. Toast the sesame seeds and the almonds just until fragrant.
  5. Pull all the meat off the rotisserie chicken.
  6. Place the torn lettuce in a large salad bowl and top with the green onions, red onion, snow peas, cabbage, chicken, toasted almonds and sesame seeds and the fried wontons.
  7. To make the dressing combine the sugar, salt, pepper, olive oil and vinegar in a dressing container and shake until combined. If you don't have a dressing container, just place in a bowl and whisk until combined.
  8. Serve topped with a generous amount of the dressing.
