Jessica's Chinese Chicken Salad

Ingredients
  • FOR THE SALAD
  • ½ package wontons, cut into strips
  • 2 cups peanut oil
  • 1 rotisserie chicken
  • 1 head torn red lettuce
  • 3 green onions chopped
  • 1 red onion, thinly sliced
  • 1 cup snow peas (frozen peas work great)
  • ½ head red cabbage, thinly sliced
  • 4 tablespoons sesame seeds
  • 4 tablespoons slivered almonds
    FOR THE DRESSING
  • 4 tablespoons granulated sugar
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • ½ cup olive oil
  • 6 tablespoons red wine vinegar
Preparation Instructions
  1. Heat the peanut oil in a frying pan over medium high heat.
  2. Once hot, fry the wonton strips in batches until half the package is cooked (you can save the remainder of the package in the freezer). Drain the fried wontons on a paper towel and set aside.
  3. Preheat oven to 350˚.
  4. Toast the sesame seeds and the almonds just until fragrant.
  5. Pull all the meat off the rotisserie chicken.
  6. Place the torn lettuce in a large salad bowl and top with the green onions, red onion, snow peas, cabbage, chicken, toasted almonds and sesame seeds and the fried wontons.
  7. To make the dressing combine the sugar, salt, pepper, olive oil and vinegar in a dressing container and shake until combined. If you don't have a dressing container, just place in a bowl and whisk until combined.
  8. Serve topped with a generous amount of the dressing.
