Super Simple Teriyaki Chicken

This is one of my fall back recipes. You the one when you need dinner quick or really just don’t feel like doing a lot but want something tasty and relatively healthy but to tell the truth, easy is the name of the game? 

It’s packed full of flavor and comes together so quickly you’ll want to make it again and again. It also works as a freezer meal, just dice up the chicken and make the sauce, throw it in a bag and freeze.

When ready to eat you can place it in a crockpot on low for 8 hours or thaw it out completely and then place it in a baking dish and bake according to the directions below.

You also just do this as a crock pot meal, I just throw the sauce and chicken in the slow cooker on low for 8-10 hours or high for 4-6. It’s super flexible and everyone loves it.

My kids will eat seconds and something thirds of this and my husband actually ate it for dinner, lunch the next day and dinner again the next since I had made a huge pot of it. That’s saying something, he usually won’t touch something more twice in a 24 hour period.

Ingredients
  • 4 pounds chicken (you can use just about any combination of pieces, I've done boneless breasts, leg quarters with the bone in, whole chicken cut up. Whatever you have on hand)
  • 2 cups soy sauce (I use liquid aminos but kikkoman works great too)
  • 2 tablespoons olive oil
  • 2 tablespoons sesame oil
  • 2 cloves garlic
  • 3 tablespoons honey or brown sugar
  • 4 cups cooked white rice
Preparation Instructions
  1. OVEN INSTRUCTIONS
  2. Preheat oven to 400º.
  3. Place the chicken pieces in a 8 inch baking dish.
  4. Put the soy sauce, sesame, olive oil, garlic and honey in a blender and blend until garlic is chopped and liquid is foamy.
  5. Pour the sauce over the chicken and toss to coat.
  6. Put in the oven and bake until chicken is cooked through about 35-40 minutes, tossing once or twice to help it cook evenly.
  7. Serve hot over rice.

  8. CROCKPOT INSTRUCTIONS
  9. Place chicken pieces in the crock pot.

  11. Pour the sauce over the chicken and toss to coat.
  12. Cook on low 8-10 hours or high 4-6 hours.
  13. Serve over rice

  14. TO MAKE THIS A FREEZER MEAL:
  15. Simply place the chicken and the sauce in a freezer bag and freeze it.
  16. When you are ready to eat it, simply thaw out in the fridge or on the counter according to how much time you have and then cook according to the instructions above.
