Grain and Sugar Free Apple Crisp

Ingredients
  • 1 large apple, diced (I used macintosh)
  • ¼ teaspoon pumpkin pie spice
  • generous ½ teaspoon cinnamon
  • 1 tablespoon coconut flour
  • 2 tablespoons low glycemic sweetener (I used agave but I know some have issues with that, erythritol is my other favorite and would work perfectly)
  • ½ cup pecans, chopped
  • ½ cup sliced almonds
  • 1 tablespoon ground flax
  • ½ cup coconut flakes
  • ½ teaspoon cinnamon
  • 1 tablespoon sweetener of choice
  • 4 tablespoons butter, soft
Preparation Instructions
  1. Preheat your oven to 350˚.
  2. Combine the apple, pumpkin pie spice, cinnamon, coconut flour and sweetener, stir to coat with spices and flour, dump into a small baking dish (I used a 6" cake pan).
  3. In another bowl, combine the nuts, flax, ½ teaspoon cinnamon, 1 tablespoon sweetener, toss to combine.
  4. Using a fork, mash the butter into the nut mixture until it is all nicely coated with the butter.
  5. Dump the nut mixture over the apples and spread around into an even layer.
  6. Bake until the apples are soft and nuts are toasted, about 20 minutes.
  7. Let cool a bit and eat warm or piping hot just don't burn your tongue!
