Candied Carrots

Ingredients
  • 6-8 large carrots (about 1 per person), sliced thinly
  • 4 tablespoons butter OR 2 tablespoons butter + 2 tablespoons duck fat
  • sea salt to taste
Preparation Instructions
  1. Place a medium skillet over medium heat and add the fat.
  2. Once your butter is melted add the carrots and toss to coat.
  3. Let cook slowly for about 10-15 minutes, turning every so often to keep from sticking to the pan.
  4. Sprinkle with salt.
  5. Once the carrots are soft and browned around the edges and sort of getting crispy, remove from heat and serve.
