How To Eat More Vegetables with One Simple Recipe

Ingredients
  • 3 tablespoons butter
  • ½ large red bell pepper, diced
  • ¼ yellow onion, minced
  • 2 cloves garlic, minced
  • 1 cup zucchini, diced
  • 3-4 pieces asparagus, chopped
  • 1 medium yukon gold potato, diced
  • salt and pepper to taste
  • 4 eggs
Preparation Instructions
  1. Heat a medium skillet over medium high heat with the butter in it.
  2. Add the potatoes and cook until golden and soft, about 10 minutes.
  3. Add all the veggies and cook until soft but still have a little crunch to them, about 6-7 minutes.
  4. Remove the veggies, if needed, add a little fat to the skillet.
  5. Crack the eggs into the pan, I usually do two at a time to make it easy to flip them, sprinkle a little salt and pepper on them. once the down side is cooked, flip the eggs over and cook the other side.
  6. Remove to plate and cook the other two eggs.
  7. Place half the veggies on each plate and top with the eggs.
