Seared Steak Fajitas

Ingredients
  • 2 tablespoons soy sauce
  • juice from 3 limes
  • ¾ pounds round steak
  • 2 tablespoons extra-virgin olive oil
  • 1 large clove garlic, minced
  • 2 red bell peppers, thinly sliced
  • 1 large onion, sliced
  • your favorite tortillas
  • your favorite toppings, I recommend avocado, chopped cilantro, fresh tomato/salsa and feta cheese
Preparation Instructions
  1. Combine soy sauce and lime juice in a plastic bag and add the steak.
  2. Marinade for about an hour (you can get away with less time if you're in a rush, I've done as little as 20 minutes. You do sacrifice a little flavor but it's still really delicious).
  3. Meanwhile, Heat olive oil in a large skillet, add the garlic, peppers and onions to pan and cook just until onions are barely starting to soften.
  4. Pour the marinade from the steak into the pan and simmer until the liquid is reduced and the peppers are softened but still have a little crunch to them, you don't want them soggy, about 4-5 minutes, remove from the skillet and set aside.
  5. Once the steak is done soaking, remove from bag and blot dry with a paper towel. In the same skillet over medium-high heat, once the pan is super hot, sear the steak on each side, about 3-4 minutes per side for medium-rare.
  6. Remove from heat and put on a plate.
  7. Slice the steak in thin slices and serve with tortillas and toppings.
