Grain-Free Super Fast Muffin In A Mug

Ingredients
  • 3 tablespoons butter
  • ½ cup ground flax
  • ¼ cup almond meal
  • ¾ teaspoon baking powder
  • ¼ teaspoon vanilla extract
  • 2 eggs
  • ¼ cup fresh blueberries
  • almonds to sprinkle on top if desired
Preparation Instructions
  1. Melt the butter in a large mug.
  2. Dump in the rest of the ingredients except the blueberries and the almonds and stir with a fork until they are totally combined.
  3. Toss in the blueberries and sprinkle the almonds on top.
  4. Microwave for 2 minutes.
  5. That's it!
