In the bowl of an electric mixer fitted with the paddle attachment combine the cream cheese and butter and beat on high for 3-4 minutes, until light and fluffy.
Add the maple syrup, if using, and mix until combined.
With the mixer on low, add the coconut, 1½ cups of the almonds and the chopped dark chocolate.
Using a 1½" scoop or a spoon scoop out into balls, roll in the remaining chopped almonds.
Once you have all of the mixture turned into balls and rolled in almonds, drizzle with the melted chocolate.
