Homemade Almond Roca

Ingredients
  • 1½ cups coarsely chopped almonds,
  • 1 lb butter
  • 2 cups light brown sugar
  • 24oz milk chocolate chips
Preparation Instructions
  1. Smear some soft butter all over a rimmed baking sheet.
  2. Sprinkle half the nuts all over the butter.
  3. In a large pot over medium heat, melt the butter. Next add the sugar and stir until dissolved.
  4. Heat to 290˚ watch it carefully as once it gets close to temperature it can turn very quickly to burnt.
  5. Once it is up to temp, pour it all over the nuts and use a spoon to spread it into an even layer. Allow to cool.
  6. While it is cooling melt the chocolate over low heat till melted, then pour it onto the toffee and smear into an even layer, top with remaining almonds.
  7. Allow to cool completely and then cut into bars.
