Camp Food: One Dish Jambalaya

- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 large green pepper, chopped
- 2 tablespoons olive oil or bacon grease if that's your thing)
- 4 links of smoked Andouille, sliced
- 24-30 medium shrimp, shelled and de-veined
- ½ cup frozen peas
- 2 tablespoons Creole seasoning
- 2 bay leaves
- 2 can (14.5 ounces) diced tomatoes
- 2 cups uncooked long-grain rice
- 4 cups chicken broth
- Salt and pepper
- Before leaving for your camping trip place all the ingredients in a gallon zip-top bag except the rice. If it doesn't all fit in one bag use a second.
- Bring the rice in a separate container.
- When you are ready to cook this after a long day of playing and having fun, dump the contents of the bag into a dutch oven or large pot, add the rice.
- Bring to a boil either over a campfire (will take longer but will still work great) or on a camp stove.
- Simmer until rice is cooked through, about 30 minutes.
