Camp Food: One Dish Jambalaya

Ingredients
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 large green pepper, chopped
  • 2 tablespoons olive oil or bacon grease if that's your thing)
  • 4 links of smoked Andouille, sliced
  • 24-30 medium shrimp, shelled and de-veined
  • ½ cup frozen peas
  • 2 tablespoons Creole seasoning
  • 2 bay leaves
  • 2 can (14.5 ounces) diced tomatoes
  • 2 cups uncooked long-grain rice
  • 4 cups chicken broth
  • Salt and pepper
Preparation Instructions
  1. Before leaving for your camping trip place all the ingredients in a gallon zip-top bag except the rice. If it doesn't all fit in one bag use a second.
  2. Bring the rice in a separate container.
  3. When you are ready to cook this after a long day of playing and having fun, dump the contents of the bag into a dutch oven or large pot, add the rice.
  4. Bring to a boil either over a campfire (will take longer but will still work great) or on a camp stove.
  5. Simmer until rice is cooked through, about 30 minutes.
