{One-Dish} Cod with Dill Tomato Sauce

Ingredients
  • 2 tablespoons bacon grease or olive oil
  • 1 whole onion, diced
  • 3 garlic cloves, minced
  • ½ cup white wine or chicken broth
  • 1 14oz can tomato sauce
  • 1 14oz can diced tomatoes
  • ½ teaspoon turmeric
  • 2 teaspoons dill
  • 1 teaspoon sea salt
  • 1 teaspoon old bay seasoning
  • 1 teaspoon freshly ground black pepper
  • 2 pounds cod
  • ¼ chopped parsley
Preparation Instructions
  1. Preheat your oven 400˚.
  2. In a oven-proof skillet or dutch oven, over the stove heat the bacon grease or olive oil over medium-low heat. Add the onion and allow to cook until just starting to soften.
  3. Add the garlic and cook for 1 minute.
  4. Pour in the white wine and simmer for just a minute.
  5. Pour in the tomato sauce and diced tomatoes and then add all the seasoning except the parsley. Stir in all the seasoning and bring to a simmer for about 10 minutes.
  6. Place the fish into the sauce and turn to coat. Place the whole thing into the oven for about 15 minutes or until the fish flakes with a fork.
  7. Sprinkle the parsley over the top and serve hot with fresh bread for dipping.
