Ingredients
  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 8 tablespoons unsalted butter, cold
  • 4 tablespoons heavy cream, divided
  • ½ cup sour cream
  • 1 large egg
    FOR THE DEVONSHIRE CREAM
  • ⅓ cup soft cream cheese
  • 1 cup whipping cream
  • 2 tablespoons granulated sugar
Preparation Instructions
  1. In a medium size mixing bowl combine the flour, sugar, baking powder, baking soda and salt together.
  2. Cut in the butter with a pastry blender until the mixture is slightly crumbly.
  3. In a medium bowl whisk together two tablespoons heavy cream, sour cream and egg. Dump the dry ingredients in the mix with a fork until just barely combined.
  4. Turn out on a lightly floured surface and knead a couple times to bind the dough.
  5. Shape into a rectangle and cut into four squares and then cut each square in half to form a triangle.
  6. Place on a baking sheet and brush a little more heavy cream on top and sprinkle with granulated sugar.
  7. Bake about 20 minutes or until golden brown.
  8. To make the cream, combine the cream cheese and sugar in the bowl of an electric mixer fitted with the whisk attachment, whisk until the cream cheese and sugar are smooth and combined.
  9. Slowly drizzle the cream in with the mixer running and beat to stiff peaks.
