Sausage and Egg Burritos {freezer meal}

Ingredients
  • butter for the pan
  • 1 dozen large chicken or duck eggs
  • ¼ cup milk
  • salt and pepper to taste
  • ½ pound sausage
  • 1 cup shredded cheddar cheese
  • 13 - 10" tortillas
Preparation Instructions
  1. Preheat a large skillet over medium heat (if using duck eggs I like to use medium-low) add enough butter to the pan to coat once melted.
  2. Crack all the eggs into a large mixing bowl, add the milk and salt and pepper and beat with a whisk until homogenous, pour it into the hot pan.
  3. Stir with a spatula until cooked.
  4. Once the eggs are cooked, sprinkle the cheese on top.
  5. Heat another skillet (and you can do this while cooking the eggs if you want to save some time) over medium-high heat and add the sausage, breaking it up into bits as it cooks.
  6. Once cooked add it to the eggs and stir to combine.
  7. Then, if you are using homemade tortillas or the ones from Costco, go ahead and cook up 13 of those on another skillet or griddle.
  8. Once everything is cooked, make up a nice little assembly line with a baking sheet at the end of the line.
  9. Using about ¼ cup per burrito, place some of the egg filling in a tortilla and roll it up, then place it on the baking sheet. Repeat until you have 13 burritos on the tray.
  10. Now that 13th one is for you, since you just went to all that work you get a snack.
  11. Or you can freeze it, I was hungry when I made mine so I ate that little guy.
  12. Freeze the burritos on the tray about an hour and then move into a freezer bag for later.
  13. When someone wants one you can grab one or two and either pop them into the microwave rotating every 30 seconds, or heat them in the oven at 350˚ for about 10 minutes.
