Fried Rice

Ingredients
  • ⅓ cup oil, I use bacon grease but olive oil would work fine
  • 4 large eggs, lightly beaten
  • 1 onion, minced
  • 3 cloves garlic, finely chopped
  • 1⅓ cups (6 ounces) medley frozen corn, peas, carrots
  • 4 cups cold cooked white rice (or if you're like me and didn't see this until you are in the midst of making dinner - you can use hot, freshly cooked rice)
  • 3 green onions, minced
  • ⅓ pound black forest ham, diced, or about 2 cups cooked, cubed or shredded meat
  • Salt and pepper
  • soy sauce or liquid amino's
Preparation Instructions
  1. In a large skillet, heat the oil over medium heat. Pour in the eggs and stir until cooked. Remove from the skillet and set aside.
  2. Add a little more grease/oil to the pan and add the onion and garlic and saute until just starting to soften.
  3. Add the veggies and cook and stir until heated through.
  4. Add the eggs, rice, green onions and ham and stir until all mixed together.
  5. Sprinkle on the soy sauce to taste just to give a little added flavor.
  6. Add salt and pepper and serve.
