Easy Creamy Bacon Pasta

Ingredients
  • 1 pound pasta
  • 2 tablespoons extra virgin olive oil
  • 1 red pepper, finely chopped
  • 2 cloves garlic, minced
  • 8oz crimini mushrooms, sliced
  • ​​5oz bacon, browned and chopped
  • ⅓ cup plain yogurt
  • ¼ cup pine nuts
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper
Preparation Instructions
  1. Bring a large pot of salted water to a boil and cook the pasta according to the package directions.
  2. Heat the oil in a large skillet over medium heat and add the red pepper. Saute until just starting to soften.
  3. Add the garlic, mushrooms and bacon and saute until the mushrooms are soft and the garlic is fragrant.
  4. Add the yogurt and toss to coat. If it seems too thick you can either add a little pasta water to thin it out or a little cream.
  5. Top with nuts and a sprinkle of parsley and serve.
