Grandma Gina's Ginger Cookies

Ingredients
  • ¾ cup canola oil
  • ¼ cup molasses
  • 1 cup sugar
  • 1 egg
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • granulated sugar for rolling
Preparation Instructions
  1. Preheat your oven to 375˚
  2. In a large mixing bowl, stir together the oil, molasses, sugar and egg, set aside.
  3. In a medium mixing bowl, sift together the flour, baking soda, ginger, cinnamon, cloves and salt.
  4. Dump the flour mixture into the molasses mixture and mix until smooth.
  5. Roll into 1" balls and coat in sugar. Place on a un-greased baking sheet and bake for approximately 11 minutes.
  6. Allow to cool on the tray for about 5 minutes and then transfer to a wire rack to cool completely.
