One-Tray Chicken Dish with Tomato, Basil and Prosciutto

Ingredients
  • Small ciabatta loaf, torn into bite size pieces
  • 8 chicken thighs or drumsticks
  • 2 cups cherry tomatoes
  • ½ cup fresh basil leaves, torn into pieces
  • 1 garlic bulb, broken into cloves, skin on
  • ½ cup kalamata olives
  • salt and pepper
  • Olive oil
  • prosciutto
Preparation Instructions
  1. Preheat your oven to 350˚
  2. In a large roasting dish place the ciabatta pieces, then sprinkle the tomatoes, basil, garlic and olives all over.
  3. Place the chicken pieces on top and sprinkle with salt and pepper and then drizzle with olive oil.
  4. Place in the oven and bake for 30 minutes.
  5. Flip the chicken pieces over and bake another 30 minutes. My chicken didn't get super brown so I just turned on the broiler for a few minutes to crisp the skin but you don't have to do that.
  6. Place the prosciutto in strips over the chicken and bake just for about a minute.
  7. Remove from oven and serve hot.
