Boarding House Potato Salad

Ingredients
  • 4-5 russet potatoes, peeled and cut into ½ inch dice
  • salt
  • ½ cup diced celery
  • ½ cup diced red bell pepper
  • ⅓ cup chopped gherkin pickles
  • 2 tablespoons minced red onion
  • 4 hard boiled eggs, chopped
  • 1 cup mayonnaise
  • 1 teaspoon dijon mustard
  • 1 tablespoon red wine vinegar
  • freshly ground black pepper, to taste
Preparation Instructions
  1. Place the potatoes in a pot and cover with water, add 1 teaspoon of salt. Bring to a boil and then reduce to low and simmer for 10 minutes or just until the potatoes are tender. Remove from the heat and drain.
  2. Place the potatoes into a mixing bowl and add the celery, bell pepper, pickles, onion and eggs. Mix thoroughly.
  3. In another small bowl combine the mayo, mustard, vinegar and pepper. Once thoroughly mixed, dump into the bowl of potato mixture. Stir until everything is completely coated with the mayonnaise mixture.
  4. Refrigerate for at least 3-4 hours and then bring back to room temperature before serving.
