Cheddar Biscuits

Ingredients
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup shredded cheddar cheese
  • 2 cloves garlic, chopped and mashed (or run through a garlic press)
  • ½ cup cold butter, cubed
  • 1 cup buttermilk
  • 4 tablespoons butter, melted
  • 1 clove garlic mashed
  • Parsley flakes, for sprinkling.
Preparation Instructions
  1. Preheat oven to 375˚
  2. In a medium mixing bowl, combine the flour, baking powder, baking soda, salt, cheese and garlic. Stir to combine.
  3. Cut in the butter with a pastry blender - if you don't have one use your fingers and then chill the dough for about 15 minutes - until the mixture resembles course sand.
  4. Pour in the buttermilk and stir gently with a fork, leave it lumpy though! It works best to only stir until the liquid has just barely been taken up and then stop.
  5. Carefully dump the mixture out onto a floured surface, knead a couple times and then shape into a disc about an 1½" thick. Cut out your biscuits and place on a baking sheet (my cutter is about 1½" across).
  6. Bake about 15 minutes or until the tops are just turning brown.
  7. Remove from the oven and combine the melted butter, garlic clove and parsley, brush this over the top of each biscuit and serve.
