Italian Wedding Cookies

Ingredients
  • 1½ cups of unsalted butter, room temperature
  • ¾ cup of powdered sugar
  • 1½ cups of ground almonds
  • 5 teaspoons vanilla extract
  • 3 cups of sifted all purpose flour
  • ¼ teaspoon of salt
  • ⅓ cup of powdered sugar for rolling
Preparation Instructions
  1. Preheat the oven to 325˚
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and then slowly add the powdered sugar and salt. Beat until light and fluffy.
  3. Add the almonds and vanilla extract.
  4. Next add the flour and beat until well combined.
  5. Shape into balls using your hands or a round dough scoop. I like to use a scoop so all the cookies come out the same.
  6. Place the cookies on an ungreased baking sheet and bake until done, about 15-20 minutes.
  7. Let them cool on the sheet about 6-7 minutes so they are just cool enough to handle and then roll each cookie in powdered sugar. If you want until they are completely cool the sugar won't stick to them.
