Marshmallow and Sweet Potato Casserole

Ingredients
  • 4 large yams or sweet potatoes
  • 1 tablespoons vanilla extract
  • 3 tablespoons bourbon
  • 3-5 tablespoons brown sugar (to taste)
  • 4 tablespoons butter ¼ teaspoons cinnamon
  • ¼ whole milk
  • 1 bag marshmallows (large or miniature)
Preparation Instructions
  1. Peel the potatoes and cut into 1 inch or so chunks and then boil them until they are cooked and soft.
  2. Drain the potatoes and mash until smooth.
  3. Add the vanilla extract, bourbon, brown sugar, butter, cinnamon and milk and mix until smooth.
  4. Preheat the oven to 350˚.
  5. Grease a 9x13 casserole pan and pour half the sweet potato mixture into the pan. Layer some of the marshmallows on the sweet potatoes and then cover with the rest of the sweet potatoes.
  6. Bake casserole until hot, about 10 minutes.
  7. Layer the rest of the marshmallows over the top of the casserole and bake an additional 8-10 minutes until the marshmallows are fluffy and browned on top.
