Tomato and Basil Couscous

Ingredients
  • 1 cup chicken broth
  • ½ (10 ounce) package whole wheat couscous
  • ½ cup chopped green onions
  • ½ cup diced seeded tomato
  • 3 tablespoons thinly sliced fresh basil
  • 2 tablespoons and 2 teaspoons olive oil
  • 2 tablespoons and 2 teaspoons red wine vinegar
  • ⅛ teaspoon crushed red pepper flakes
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper

  2. Bring the chicken broth to a boil, then remove from heat and add the couscous, cover and let sit for 5 minutes.
  3. In a serving bowl, combine the rest of the ingredients while the couscous is sitting.
  4. Fluff the couscous with a fork and add to the bowl.
  5. Toss to combine all the ingredients and put in the fridge until chilled about an hour (or serve it warm if you prefer).
