Peas with Toasted Almonds and Caramelized Shallots

Serves: makes 2 cups
 
Ingredients
  • ¼ cup sliced almonds
  • 3 tablespoons butter
  • 2 shallots peeled and thinly sliced
  • 2 tablespoons sugar
  • 2 cups peas, I used frozen but fresh would be amazing
  • kosher salt
  • freshly ground black pepper
Preparation Instructions
  1. In a dry pan toast the almonds over medium heat, stirring the whole time and watching carefully, they brown quickly. Remove from pan and set aside.
  2. Add butter to pan, once melted, add the shallots, cook until soft about a minute or two.
  3. Sprinkle sugar, salt and pepper over the top. Stir until the sugar is dissolved, reduce heat to medium-low and allow to caramelize for about 7-8 minutes without stirring.
  4. Add the peas to the pan and toss to coat with the shallot, butter mixture until the peas are cooked, you may need to add a bit of additional butter if it looks a bit dry.
  5. Add the almonds.
  6. Once everything is cooked, serve hot!
