Creamy Cauliflower Soup

Ingredients
  • 1 stick butter
  • ½ large onion, diced
  • 3 carrots diced
  • 1 stalk celery, diced
  • 1 large cauliflower head, roughly chopped
  • 2 tablespoons fresh or dried parsley, minced
  • 2 quarts chicken broth
  • ½ cup plus 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • salt to taste
  • ½ cup sour cream
Preparation Instructions
  1. In a large stock pot or dutch oven, melt the butter.
  2. Add the onion, carrots, celery, cauliflower and parsley, cook for about 15-20 minutes until things start to soften a bit.
  3. Pour in chicken stock or broth. Bring to a boil, then reduce heat and allow to simmer for 15 minutes.
  4. In a small bowl, combine the milk and flour until you have a smooth paste, pour into the soup and stir to combine.
  5. Stir in heavy cream.
  6. Stir and cook until it is hot and has thickened.
  7. Add the sour cream.
  8. Check seasoning and add more salt or pepper if necessary.
