If you are a regular follower here you know I love my chicken salads. It’s my favorite healthy go-to lunch. 

I like to make a big batch of it at the beginning of the week and just keep it on hand. It also works for dinner in a pinch, which is great!

I know…chicken salad has kind of a bad wrap because it’s made with mayonnaise. But if you make your own, it suddenly becomes a healthy condiment! Use a really delicious and healthy oil (like avocado oil) and you’re good to go. It’s especially great if you’re on a high fat diet, which I usually am…ahem….I like fat. It’s seriously the best. 

Anyway, I love my chicken salads over greens usually but sometimes I like to change things up a tad so the other day I made these tasty little wraps.

Super simply and easy and it felt very satisfying and I loved them.

Serves: 3 cups chicken salad
Ingredients
  • 1 boneless skinless chicken breast, cooled and shredded
  • ¼ cup sweet onion, minced
  • ½ cup craisins
  • 1 small apple, diced
  • ¼ cup celery, minced
  • ½ teaspoon grainy mustard
  • 1 teaspoon dried tarragon
  • salt and pepper to taste
  • ½ cup walnuts, chopped
  • ½-3/4 cup mayonnaise or as much as needed to nicely coat everything
  • 1 head butter lettuce
Preparation Instructions
  1. Combine all the ingredients together in a medium mixing bowl, use as much mayo as needed to make it sort of saucy and delicious.
  2. Mix it all together and then select the largest butter lettuce leaves, scoop a large spoonful of the chicken salad onto the lettuce, wrap and serve.
