Homemade Mayonnaise

  homemade mayonnaiseIn yet another effort to be as healthy as possible and eliminate ingredients from my diet that I cannot identify I decided to try making my own mayonnaise. It was amazingly easy and super fast. I know you probably are thinking, mayo? Healthy? Well really if you make it yourself it’s not all that bad for you. I used extra-virgin olive oil which gives it a strong flavor if you taste it plain (I always taste everything) but on a sandwich it’s delightful. But you could use whatever vegetable oil you want or try to find a milder flavored olive oil. I love mayonnaise. (makes one pint) Ingredients 2 whole Egg Yolks 1 teaspoon Dijon Mustard 4 teaspoons Fresh Lemon Juice ½ teaspoons Kosher Salt ¼ teaspoons Pepper 1/2 cup Vegetable Oil, olive oil or avocado oil are good choices Preparation Instructions Put all the ingredients except the oil into a food processor. Run until combined and light and fluffy. Then with the processor running, slowly drizzle the oil in until it becomes thick and creamy. Use it now or put it in a jar for later use. Done. How easy was that?
