Grain-free (but you'd never guess!) Walnut Bread

Ingredients
  • ¾ cup walnut butter (you can easily make this by putting about 1½ cups of walnuts into your food processor and blending, I had to add about a tablespoon of olive oil to get it to be smooth and it does take a couple minutes so let it run)
  • 4 eggs
  • ¼ cup Almond flour
  • ½ teaspoon Baking soda
  • ½ teaspoon Xanthan gum
  • ½ teaspoon sea salt
  • 1 tablespoon ground flax meal
Preparation Instructions
  1. Preheat your oven to 350.
  2. Butter a 9x13 bread pan and coat with almond meal, set aside.
  3. In a medium mixing bowl, combine the walnut butter with the eggs and stir until smooth.
  4. In another small mixing bowl combine the almond flour, baking soda, xanthan gum, salt and flax.
  5. Sprinkle the dry ingredients into the wet and stir to combine.
  6. Dump the mixture (don't forget to scrape the bowl!) into the prepared bread pan and bake for about 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for about 40 minutes before you try to remove it.
