Pizza with Sardines and Caramelized Onions

Ingredients

  • FOR THE DOUGH
  • 3 cups warm water
  • 1½ tablespoons sea salt
  • 1½ tablespoons active dry yeast
  • 6½ cups all purpose flour
    TOPPINGS
  • olive oil
  • sea salt
  • freshly ground black pepper
  • 1 large onion, ¼" slices
  • 4 tablespoons butter
  • 1 tin sardines, chopped
  • 4 oz fresh mozzarella
Preparation Instructions
  1. This dough recipe makes enough for 2 pizzas or you can save it in the fridge for up to a week and make the other half into a round loaf of bread or bread sticks.
  2. Combine all the dough ingredients together in a large bowl and allow to rise for at least an hour, 2 is preferable.
  3. Preheat the oven to 400˚
  4. Take out half the dough and roll into a pizza, I like mine pretty thin, like ¼". Place on a pizza stone or a greased pan.
  5. Brush with a bit of olive oil and sprinkle with salt.
  6. Bake the crust for 15 minutes.
  7. Meanwhile work on getting those onions caramelized.
  8. Place the butter in a medium size frying pan (I use cast iron) over low heat.
  9. Once the butter is melted, add the onions and toss to coat with butter. Cover and stir every so often to keep them from getting to dark but let them sit as much as you can.
  10. Once they are a nice golden color and smell sweet they are done and you can set them aside.
  11. Once the crust comes out of the oven, sprinkle the sardines all over, then spread out the onions.
  12. Distribute the mozzarella all over and crack pepper all over that and bake for about 18-20 minutes more until the crust is golden and the cheese is all melted.
