Peanut Butter Granola {with no refined sugar}

Serves: about 5 cups of granola
 
Ingredients
  • 4 cups old fashioned rolls oats
  • 1 cup chopped pecans
  • 1 cup natural, no sugar added, peanut butter
  • 1 cup natural, no sugar added, apple sauce
  • 1 cup honey
  • 1 tablespoon pure vanilla extract
Preparation Instructions
  1. Preheat oven to 325˚.
  2. Place the oats and nuts in a large mixing bowl and toss to combine.
  3. In another medium mixing bowl combine the peanut butter, applesauce, honey and vanilla extract.
  4. Pour the peanut butter mixture over the oats and use your hands to mix it evenly into the oats. Once the oats are evenly coated in the peanut butter mixture, pour it onto two rimmed baking sheets and spread out in an even layer.
  5. Bake for 10 minutes, use a spoon to toss the granola and bake another 10 minutes, continue tossing and baking until the mixture is fairly dry. Once it is closer to being dry, you may need to toss every 3-5 minutes to keep from burning.
  6. Once it is brown and slightly crispy, remove from the oven and cool on the baking sheet. Store in an air tight container.
