Gluten Free and No Refined Sugars Zucchini Waffles

Ingredients
  • 2 cups Mama's Coconut Flour Blend
  • 1 cup rice flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon ginger
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 4 tablespoons honey
  • 1 cup plain yogurt
  • 4 eggs
  • 1½ cups whole milk
  • 1 cup chocolate chips
  • 1 cup zucchini (drained of excess water but not squeezed)
Preparation Instructions
  1. Preheat your waffle iron while you are making the batter.
  2. In a large mixing bowl whisk together the flours, baking powder, baking soda, cinnamon, ginger and salt.
  3. In another medium mixing bowl combine the vanilla, honey, yogurt, eggs and milk.
  4. Pour the milk mixture into the flour mixture and stir to combine until smooth.
  5. Stir in the chocolate chips and zucchini.
  6. Make waffles according to waffle iron directions.
