Gluten Free and No Refined Sugars Zucchini Waffles

Serves: makes 9 - 6inch waffles
- 2 cups Mama's Coconut Flour Blend
- 1 cup rice flour
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon salt
- 1 teaspoon pure vanilla extract
- 4 tablespoons honey
- 1 cup plain yogurt
- 4 eggs
- 1½ cups whole milk
- 1 cup chocolate chips
- 1 cup zucchini (drained of excess water but not squeezed)
- Preheat your waffle iron while you are making the batter.
- In a large mixing bowl whisk together the flours, baking powder, baking soda, cinnamon, ginger and salt.
- In another medium mixing bowl combine the vanilla, honey, yogurt, eggs and milk.
- Pour the milk mixture into the flour mixture and stir to combine until smooth.
- Stir in the chocolate chips and zucchini.
- Make waffles according to waffle iron directions.
