  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes
  • 1 cup kalamata olives, pitted
  • 3 tablespoons capers, drained
  • kosher salt and freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil
Preparation Instructions
  1. Preheat the oven to 400ยบ.
  2. In a medium mixing bowl combine the tomatoes, olives, capers, 2 tablespoons of the olive oil and sprinkle with a little salt and pepper and set aside.
  3. In a large cast iron skillet (or one that can go stove-top to the oven) heat the remaining tablespoon of olive oil over medium high heat. Sprinkle the chicken breasts lightly with salt and pepper and add to the skillet. Brown both sides and then add the tomato mixture to the skillet.
  4. Place the skillet in the oven and bake until chicken is cooked through, about 25-30 minutes.
  5. Serve hot along with whole wheat couscous and a salad.
